Parmigiana


Ingredients (4 people):

– 400g of AMIFOOD Basil Sauce
– 100g of parmesan
– 2 aubergines
– 125g of mozzarella
– Salt
– Olive oil
– Fresh basil

Step 1:

Preheat the oven to 200°C.
Cut the aubergines into thin slices and draw out the moisture with salt for 20 minutes in a sieve.
Rinse the aubergines with cold water so that they are not too salty.
Fry the aubergines in a pan using a generous amount of the olive oil.
Cut the mozzarella into thin slices.
Set aside the mozzarella and aubergines.

Step 2 :

On an oven safe plate pour a bed of AMIFOOD Basil Sauce and arrange the aubergines alternately with the mozzarella and the AMIFOOD Basil Sauce in such a way as to form layers.
Finish with a layer of AMIFOOD Basil Sauce and sprinkle with grated parmesan.
Put in the oven for 30 minutes. Finish cooking by browning the plate.

Before serving, arrange some fresh basil leaves on the plate.
